Last year, United announced new Polaris Studio Suites with Caviar service on the 787-9 aircraft. Now, the airline is taking another step toward elevating the onboard dining experience in Polaris cabins. Beginning August 1, the airline plans to roll out a new series of regionally inspired meals in its Polaris international business class, created in collaboration with the culinary team behind the Netflix series Chef’s Table.
The partnership brings together acclaimed chefs from around the world to design exclusive in-flight meals tailored to United’s global network. Travellers departing from key United hubs will experience menus inspired directly by the food culture of that city.

United has assembled an impressive roster of chefs based in major U.S. hubs such as Los Angeles, Chicago, Houston, San Francisco, Denver, New York/Newark, and Washington, D.C., as well as international gateways including London, Tokyo, and Sao Paulo;

While I am not a fan of the high-density Polaris cabin layout, particularly on the 777 aircraft, I can’t wait to try out the enhanced Polaris product on the new 787-9’s. And I am all for chef-designed meals and bolder dining experiences onboard.

The first of these new chef-designed meals is expected to appear onboard starting August 1, 2026. Between the new dining program and the upcoming Polaris Studio Suites, United’s premium cabin could look noticeably different in the near future, and it will be interesting to see how the experience evolves once both elements are fully in place.
